Kaffebox Advent Calendar Day 8

Today is day 8 of the Cafe Box Advent Calendar. Today we're brewing Mr. Mengeshi Durso, which is an Ethiopian Yirgacheffe, natural process from Swerl.
Ethiopian Yirgacheffe is actually what got me into coffee originally, so I'm quite curious to try it, even though blueberry bombs don't really exist so much there anymore. See why here.
The flavors are elegant and sweet, tasting like jasmine, red berries, red apple, and brown sugar.
The recipe is 15 grams to 249 grams of water, 94°C, and a grind size of between 250 and 700, which is kind of an insanely wide grind size. So we're going to do 16 clicks on the Q Air, and it actually uses basically the recipe that I use normally.
First pour 45 grams, second pour 30 grams up to 100, third pour the remaining water. So it does a two-part recipe, just splits the water a little bit differently than I do. So we shall see how this goes, and altitude is 2200 to 2350 meters over sea level.
We have a 3 minute and 40 second total brew time, quite a bit of fines. Might want to coarsen up the grind to drop on the next brew, but it drains pretty evenly without stalling very much until the very end. We shall see how it tastes.
The initial sip of coffee is a very good Ethiopian. It's sweet, giving some really strong brown sugar and jasmine vibes at the moment. And it is not delicate. It's quite, has a lot going on.
On the second sip, you have the jasmine and brown sugar up front, and the red berries kind of linger in the back. I don't really have any red apple at the moment, though, but we'll see how it cools.
Okay, the word I was looking for was complex. It's a very complex coffee. Elegant, as it says. Coffee is extremely sweet, and I'm getting a lot of jasmine and a lot of brown sugar, but I think the acidity is kind of the missing component here.
And I think if I go coarser grind, it will bring out some more acidity. So I think I'm going to brew it again before a final rating.
Update: I brewed coarser and finer and this was the best expression of this coffee.

I wouldn't put this up there as high as yesterday's coffee in the current brew, but probably about 8 and a half, somewhere around there.
