Kaffebox Advent Calendar Day 7

Today is day seven of the Kaffebox Advent Calendar. We are brewing El Rodeo, a Colombia, I don't know what these other origins are, Curiti, Santander.
The variety is Sidra and Geshe, it's a mix, and it's roasted by Sloinj out in Sweden. It's a double fermented washed at 1,900 to 2,200 meters over sea level.
Their brew is a 20-gram to 300-grams water at 94 Celsius at 800-950 in grind size. They're using a 4-6 method of 5 60-gram pours.
I brewed this yesterday but didn't record it. I did yesterday 22 clicks, and I did 15 to 50, 50 grams every 30 seconds.
Today I did 23 clicks on the Q-Air, and we did 16 to 65, which is the same 1 to 16.6 ratio, with 53 gram pours every 30 seconds.
Total brew time was just about four minutes.
Aroma and Initial Impressions
The initial aroma is currently just very steamy, but getting some hints of floral.
That's really all that's coming off at the moment.
The flavor notes on this coffee is toffee, floral, anise, and stone fruit.
As the coffee is cooling down, the aroma we are getting is now pretty sweet and floral, but not super intense.
Coffee has now cooled down even a bit further, and now it's extremely, extremely sweet-smelling.
Very toffee-like.
The initial sip is super-duper-duper sweet.
This is fantastic and lovely.
I'm getting toffee with, like, hints of vanilla.
As it's cooling, we're still getting toffee up front.
No longer really any vanilla, but we are getting a lot of stone fruits towards the end.
And now it seems like the aftertaste is turning vanilla-y.
So, we're getting toffee up front, stone fruits towards the end, and then just a vanilla-y aftertaste.
This is incredible.
As the cup is cooling down, we're getting, again, toffee and stone fruits with the vanilla on the back end.
The stone fruits are now more present, but this is probably the sweetest coffee I've had all year.
As the coffee continues to cool, the stone fruits become more prominent, and the toffee is reduced a little bit, but sweetness still stays high.
Acidity increases a little bit, but it's still extremely well-balanced and definitely more sweet-forward.

This was also probably ends up being, like, a 9.5 out of 10, though I think it was my favorite coffee so far of the advent calendar.
