Today is day number 20 of the Kaffebox Advent Calendar.
Today we're brewing Axel Polisios, which is the producer.
It's a Guatemalan. The variety is Villa Sarchi, which I've never had before.
It's a fully washed process, 1,500 to 1,900 meters over sea level, and it's roasted by Langara in Norway.

The flavor notes are apple, grape, citrus, and caramel.
We shall see how this goes.

They gave a pretty good recipe, a standard two pour, which is what I do anyways.
And it was roasted a drop darker than I think the other stuff, so it actually extracted pretty nicely.
18 grams, 300 grams of water, and 96 Celsius, 700 to 800 microns on the grind size.

The initial aroma on this is not particularly strong at all.
Maybe a slight caramel smell, but nothing really going on.

The initial taste of this coffee is pretty blendy, like Guatemalan usually is.
But I definitely have all the tasting notes of apple, grape, citrus, and caramel throughout, And it is quite pleasant.
There's like a lingering of caramel in the background after the first sip.
I'm really enjoying this coffee.

As it cools down it's an apple, grape, citrus punch, like right in the front of you.
And then with the caramel-y back end, but still a little bit of acidity behind it.
It's a bit roasty for me, like a bit medium-ish for me.
But maybe that's just compared to the rest of the calendar, so I'm being a bit nit-picky.

Honestly, it's my favorite Guatemalan ever.
Super, super impressed by this coffee.

As it's cooling down, the balance of acidity and sweetness of this is next level.
I'm not getting any super punchy of any specific flavor.
But, like, just the acidity to sweetness, like, it punches you in the face with acidity.
And then it's just sweet after the fact.
It is really, really fantastic.

We're really enjoying this cup of coffee.
We're gonna rate this coffee that I'm absolutely blown away by.

  • Acidity: 10 out of 10 (I'd give it higher if there was an option)
  • Sweetness: 10 out of 10
  • Body: 5 out of 10
  • Flavor: 7 out of 10

I'm actually gonna give this coffee a 9.5 out of 10.
It didn't score high on the individual scores, but just the acidity-sweetness ratio was just absolutely mind-blowing on this coffee.

So, highly recommend 9.5/10
