Today is day two of the Advent Calendar. We are brewing from the Coffee Collective a Bekeli Honey. It's an Ethiopian Sidamo honey process, 2200 to 2350 meters over sea level, which is quite high. Honey is generally in between washed and natural in terms of tasting notes. The flavors listed are sweet and fruity, notes of melon and raspberry. Again, we did the V60 brew. It recommended a 48 gram bloom and then a 1 pour.
I actually ground at the recommended size, 24 on my Q Air, which is much higher than I usually do, but it actually finished at a total brew time of 2 minutes and 37 seconds, so it's actually spot on.

Ethiopians are usually some of my favorites, especially these flavor notes, as opposed to the florally-style flavor notes. The aroma we're getting off the cup is sweet and fruity, with nothing particularly standing out.
The aroma is not particularly strong at the moment. First sip, it's extremely clean and it actually tastes more like a washed. A little bit notes of melon.
But it kind of feels under-extracted a little bit.
But it did fit the recipe exactly, so let's see how it cools.
Coffee's extremely, extremely clean, as mentioned before.
But wondering if it's still a tad under-extracted, as also mentioned before.
My final tasting notes are: aroma was a 4, acidity was a 4, sweetness was quite up there, it was actually a level 6, body was a 4, and flavor was a 5.
Overall, it came out very mid.
I did brew it again and tighten up my grind and got worse results, so......
