Today is day number 19 of the Kaffebox Box Advent Calendar.
Today we're brewing Chelchele, which is an Ethiopian Yirgacheffe, which is the first coffee region that got me into coffee.
The French Press Ethiopian Yirgacheffe from like 10 or 11 years ago.
That was a blueberry bomb, as mentioned in the previous Yirgicheffe that we brewed. Oh and they barely exist anymore.

This is produced by Edian Ethiopian Coffee, and it's an heirloom varietal,
a wash processed, February 2025 harvest, 1950 to 2100 meters above sea level, roasted by Prolog.
We were giving a 14.5 to 15.5 to 50 grams water, 100 Celsius temperature,
with address to the brew and TDS extraction target.
It was a single-pour recipe, which we ended up doing.

Brew Details

I brewed this at, first I hit it at 20 clicks, wasn't super happy with it.
So today I brewed it at 9 clicks, and the brew time was 2:20 or 2:40, so we hit 2:20 on the 19 clicks on the Q-AIR.
And now we will smell and taste it.

Flavor Notes

The flavor notes on this coffee are fruit, floral, peach, and honey, so pretty standard washed Ethiopian tasting notes.
The initial aroma is a 6 out of 10.
Fairly mild, but very floral and honey-forward.

Tasting Notes

The initial taste of this coffee is extremely delicate and floral, peachy, tea-like.
Very nice expression of Ethiopian coffees.
Getting a lot of peach and peachy-type fruits.
So, like, not punchy red fruits, but somewhere in between red fruits and citrus.

As the coffee cools down, the aroma is getting more intense, and it's really, really nice peach. Overall, this coffee is just a peach and honey tea, and is very, very nice, extremely sweet. Um, probably a bit mild for some, but I'm really appreciating this coffee.
Really top-end Ethiopia feel.
