Kaffebox Advent Calendar Day 15

Today is day number 15 of the Kaffebox Advent Calendar. Today we're brewing Diego Baraona. It's a El Salvadorian Paco Mara. Natural process, 1500 meters over sea level, and the producer is Diego Baraona, roasted by Morgon.
Official Recipe
The recipe they give is a 1/16.6, 18 grams to 300 grams of water, 96 Celsius at 700 grind size. They want the first pour of 50 grams for 30 seconds, pour 100 at 30 seconds, pour 100 more at one minute, and the last 50 grams at 130. Brew time should finish 315 to 330.
We made this exact recipe yesterday, and it was only until the coffee was actually cool, not even lukewarm, but cool, that we finally got the tasting notes of pineapple. It was just chocolatey all the way through.
Today's Modified Recipe
So today we brewed it as a 5-4 recipe with a 40 gram bloom. And we did the same 1 to 16.6. We did 15.9 grams of coffee to 264 grams of water, and we are going to see how it tastes, if we could pull out some more pineapple, because the pineapple was the highlight of the flavor here.
Initial Tasting Notes
The initial aroma on this coffee is about as bog standard as it gets, maybe a 2 out of 10. You could give me a Starbucks and I would confuse the two. The initial sip of this coffee is very similar to yesterday, but with a little bit more acidity punch, and actually somehow more lingering chocolate than yesterday. Yesterday was very lingering chocolate, but today it's even more. I definitely prefer this brew to yesterday's. We'll see how it goes as it cools down.
So this brew, for my preferences, is way, way better than yesterday's. For my wife, it's not so much. She does enjoy it with some milk. She said that it actually reverses, and it's chocolate forward and pineapple after for her. For me, it's currently pineapple forward and chocolate afterwards. Significantly better than yesterday. Yesterday it was very underwhelming, but today it's pretty solid. So we shall see as it cools down. I'll try to flesh out my thoughts flavor wise. Okay, we finished the cup. This is a very smooth and drinkable coffee. Very beginner friendly. Again, super long lingering aftertaste of chocolate, which is reversed with milk actually.

- Acidity: 5 out of 10 (yesterday it would have been a 1 out of 10)
- Sweetness: 9 out of 10
- Body: 7 out of 10
- Flavor: 6 out of 10 (not really my taste)
- Overall: 6.5 out of 10
Though for non-coffee drinkers, this is a fantastic intro to quality coffees in my opinion. That's all for now. We are checking out.
