Today is day number 14 of the Kaffebox Advent Calendar.
Today we're brewing Stiven Hoyos, which is a fermented washed Gesha.
I've never had a processed Gesha before. Its from Columbia and the producer is Stiven Hoyos.
Harvest is December 2024, 1850 to 1950 meters above sea level,and this is roasted by Swerl.

Again, with their pretty ridiculous recipe.
It ends up being a bloom and a two pour.
So I did my regular bloom and two pour at 20 clicks on the Q air.
I did 1 to 16.6 ratio.
So I did 16 grams of coffee to 266 grams of water at 94 C.
And again, that's 20 clicks on the Q Air.

The initial aroma on this is quite florally with a little bit of like almost orange or grapefruit.
The initial taste of this is super fruit and floral forward. Orangey and citrusy. And actually quite sweet.
As the coffee cools, it's extremely, extremely complex. Very gesha-like.
But it's actually quite a bit more flavorful than typical Geshas that I've had.
Probably due to the fact that it's more process forward.
It's still extremely, extremely clean, just slightly more process forward and less tea-like than a typical Gesha.

This is a fantastic, fantastic coffee that's extremely complex.
Again, getting florals up front. Fruits, sweetness, citrus.
Which is good because the flavor notes are sparkling and floral.
Not really getting so much sparkly acidity at the moment, but maybe it's there.
Orange blossom, citrus fruits, and lingering sweetness.
Definitely getting the lingering sweetness, the florals, and like citrus or orange.

Continuing through this cup, this is like a creme de la creme in terms of coffee.
Super, super high quality.
While it's not process forward, it's a process forward gesha, but it's not what I would call like super processed at all.
It's still extremely clean.
I'm really, really enjoying this because usually geshas are just too clean and too tea-like for me.
This is extremely flavorful.

The biggest note is orange on there, but it's floral and citrusy. And it is quite sweet.
That balances out the citrusiness.
On aroma, there wasn't anything really special.
It was a bit more than a gesha, but kind of like a pre-standard coffee.
So I'm going to give it a 5 out of 10.

I'm going to hold off to rate the acidity, sweetness, and flavor.
But I will go ahead and rate the body.
The body is actually extremely high for a gesha.
It's about a 7 on body, I would say. 7 or 8.
Somewhere in that range. Give it a 7.5 actually.
So let's say 7.5 on body.

And I haven't concluded what I think of the acidity and sweetness and flavor yet.
But it is incredible.
I'm going to finish the cup and then go ahead and rate those.

Overall, I think I'm going to go for the flavor first on this coffee, which was a 10 out of 10.
We have aroma at 5 out of 10.
Acidity and sweetness, I'm going to put them both at 9 out of 10.
Actually, the balance is incredible.
This is a 9.5 out of 10 on the coffee as a whole.

Acidity and sweetness, as mentioned, are 9 out of 10.
Body is a 7.5 out of 10, which is crazy good for a gesha.
And flavor is 10 out of 10.
Absolutely delicious.
