Kaffebox Advent Calendar Day 11

Today is day 11 of the Kaffebox Advent Calendar.
Today we're brewing El Mirador, the producers are Finca El Mirador and Rosalina Lopez. It's a washed proccess bourbon from Guatemala.
Harvest is February to March of 25, altitude is 1500 to 1720 meters over sea level.
Roasted by Lippe Cafe out of Norway.
Recipe: 30 to 500, which is weird to go for such a large recipe
Temperature: 94 to 95°C
Grind size: 700 to 800
Ended up brewing this at 21 clicks, 15 grams to 250, using yesterday's 5 pour,
as it was running extremely fast.
Though it might need to be ground even a drop finer, because this ran fast as well, even for the 5 pour method.
Flavors: red berries, dried fruit, and chocolate.
The initial aroma is very red berry forward, I would say.
The initial sip of this coffee tastes extremely under-extracted, so I'm thinking about brewing this again at a significantly finer grind.
We'll see how it goes.
We're getting a drop of dried fruit and a slight chocolatey-ness, but honestly, not very much.
Though Guatemalans tend to brew like this for me a lot.
So, we'll continue with this cup and then see if we'll brew it again before our final rating.
As the coffee cools down, we're getting red berries and dried fruit, like it says.
Chocolate is kind of there as a lingering aftertaste, but it wouldn't be on the forefront of the cup.
It's very, very mild, but I'm not sure again if that's due to extraction or not.
As we're nearing the end of the cup, red berries and the dried fruit are more prominent, but still very mild.
We are going to go ahead and brew this again and append another voice note.
I brewed this coffee again and it came off as very muted and bland again, honestly.
It's probably a three out of ten across the board on this one.
I brewed it five clicks finer, 94°C, same one. Actually no, I dropped it down to a one to sixteen ratio.
And it still doesn't taste like much.
I might pull a shot of espresso and see how that goes.
But currently, this is just a three out of ten overall.
There's nothing really to this coffee, unfortunately.
3/10 and the first real miss of the calendar.
