Kaffebox Advent Calendar Day 10

Today is day 10 of the Kaffebox Advent calendar.
I actually lost the transcription from yesterday of this coffee, but I think I was grinding too fine, so we're doing it again today.
Today we're brewing Eber Tocto.
It's from Peru, the producer's name is Eber Tocto, as is the name of the coffee.
It's a yellow bourbon, a honey process, 1830 meters over sea level, and it's roasted by Jacu up in Norway.
As I was mentioning before, it was a bit too spicy yesterday, but the flavor notes are ripe fruit, spice notes, dried pineapple, and caramel.
Yesterday we brewed it at 22 clicks on the Q-Air, which was way too fine still.
So we bumped it up to 24 clicks.
The grind size recommendation was 700 to 950, and a 1/16.6 ratio of 15 grams to 250 grams of water.
So we're brewing 18.9 grams, which is the last bit of this coffee, at 313 grams of water, so the same ratio.
It's five equal pours, 30 seconds apart, and it should be a total brew time of 2:50 to 3:00.
The initial aroma of this brew, just like the first brew, was just extremely spice forward, not super layered or complex in any way at the moment.
The initial sip of this brew is a little bit more fruit forward.
It's still pretty spice heavy, but slightly more fruit forward than my original, and I'm enjoying it.
This coffee has been really, really nice as it's been cooling down, way, way better than my initial ratings.

I'm getting a very pleasant sweetness in the front that quickly turns spicy, but then finishes sweet again. Whereas when I brewed it the first time, it was just all spice pretty much.
This is definitely a more advanced coffee.
You'll have to be interested in trying out other flavors.
Definitely not what I'd be looking for in a bag of coffee.
But after drinking it, I could say I really enjoy this.
- Aroma: 3/10
- Acidity: 7/10 (was 5/10)
- Sweetness: 8/10 (was 5/10)
- Body: 8/10 (unchanged)
- Flavor: 7/10 (was 5/10)
The acidity seems to blend nicely with the spiciness on this brew.
The sweetness is really quite sweet in a weird sort of way.
It's like bright sweet and then immediately spice right after.
Body hasn't changed much, surprisingly, even though we went with a much coarser grind. It's really silky, smooth feeling.
Flavor isn't my preferred profile, but it's definitely very unique.
Overall, I think originally I gave it like a 5.5/10.
I think I'll give this a 7/10 on this guy.
Definitely a very interesting experience.
If you want to try something very different, look for honey processed Perus, I guess.
